Easy-Peasy Pumpkin & Cake Mix Cupcakes

I needed a tasty treat for my Daisy Girl Scouts this week.  We were celebrating Girl Scout Founder, Juliette Gordon Low's birthday which is at the end of the month.  I heard you could add pumpkin to a cake mix and make delicious cupcakes, so I gave it a try...


I grabbed a can of pumpkin, and a box of cake mix from the pantry.  This mix called for eggs, butter and water. I omitted the water since I was adding a can of pumpkin.  My kids don't care much for the taste of pumpkin pie, so I didn't want too much spice, so I just added a little cinnamon.

It whipped up nice and fluffy.

I topped each with cream cheese frosting and a pumpkin candy corn.

They came out a little dense, but very moist and delicious!


Definitely will make these again.
